5th Place in World Barista Championship-Vienna Austria 2012

Good afternoon judges, I am Stefanos.


It is my distinct honor to represent my country.., Greece for the 6th time at the World Barista Championship.


Today I will serve to you a single-estate coffee from El Salvador, produced by Finca Plan De la Batea.
I have worked with this coffee for two years. It is an orange bourbon, grown at 1500 meters near the town of Santa Ana, close to the Izalco Volcano

With the help of Aida Batlle and her team we processed this coffee in 5 different ways and carefully evaluated the characteristics that each process gives to the coffee.
The processes we have done are:
•    Natural 
•    Washed traditional
•    Semi-Washed
•    Ethiopian style
•    Kenya style
All of the coffee processing was done at a micro mill J.HILL


I would like to thank Ricardo for his hospitality at his farm and for the information he shared with me about the orange bourbon, and Aida Battle and her team DOUGLAS and LOUIS who took good care of my coffee.
